Our Family's Favourite Recipes

Recipe: Beef and Barley Soup
From: Alice Harder
lb. cooked ground beef
8 c. beef broth
1 clove garlic, minced
1 c. chopped onion
1 c. chopped celery
2 c. thinly sliced carrots.
1/4 tsp. pepper
3/4 c. pearled barley
1 can 28 oz. tomatoes or 4 c. fresh diced tomatoes
1 - 8 oz. tomato sauce
3/4 c. lentils, sorted, rinsed
1 c. shredded Swiss cheese (optional)

Cook onion, celery, garlic till tender. Add broth, tomatoes, lentils, barley, pepper, and carrots.
Cook 40 min. or until barley, lentils, and carrots are tender.
Serve in bowls and top with Swiss cheese, if desired.
(Or put it in the slow cooker and let cook slowly.)



Recipe: Potato Cheese Soup

3 c. potatoes
½ c. carrots, sliced
½ c. celery, chopped
¼ c. onions, chopped
1 c. water
2 chicken bouillon cubes
8 oz Velveeta (about 2 c. cubed)
½ c. ham cubed

Cook vegetables and seasonings in I c. water until tender. Dissolve flour in milk, add to vegetables and stir until mixture thickens. Add cheese and stir occasionally until cheese melts. Add ham.


Recipe: Southwest Cheese Soup

Serves 6-8
1 lb hamburger - cooked
1 chopped onion
2 cans whole kernel corn
1 can Rotelle*
2 cans chopped tomatoes
1 can pinto beans - drained
l 1b Velveeta cheese
3/4 cup water
1 tsp cumin
garlic powder or chopped garlic
mix all ingredient except for the cheese

Cook 1-2 hours, or 4 hours on high in crock pot. Add the Veveeta cheese at the end. Serve when cheese is melted.

(I had cold hamburger and cooked it 2 hours in the crock pot on high)
I think I add the liquid from the corn also, but you can go from here!
Ben puts black beans (drained) in it. You really can add anything that sounds

Recipe: Chicken Breast Casserole

4 chicken breasts
a can cream of chicken soup
½ cup of white wine
Monterrey Jack Cheese
I stick of margarine
Pepperidge Farm mix
Take chicken breasts and fold under. Top each breast with two cheeses. Mix cream of chicken soup with wine. Pour over chicken breast. Cover casserole with Pepperidge farm mix. Melt margarine and dribble over top.
Bake covered 350 degrees about an hour.

[*Aldi’s has canned tomatoes with green chiles WAY less expensive than Rotelle. That’s what I use.]


Recipe: Chicken-Broccoli Casserole

4 c. fresh broccoli, boil for a couple of minutes. Arrange in a greased 9 by 13 bake dish
3 chicken breasts cook and cut in small pieces (about 1”). Arrange over broccoli
Sauce:
1 can cream of mushroom soup
1 can cream of celery soup
¼ c. chopped onion
1/3 c. mayonnaise
1 medium lime (or to taste)
2 TBS curry (or to taste)


¾ c. mozzarella cheese, grated
½ c. Italian bread crumbs, mix and arrange on top. Bake at 350 degrees until cheese melts and looks a little golden (about 25-30 min)

Recipe: Granola Bars

4 c. cereal (I use nature’s grains from Wall mart
1 c. quick oatmeal
1 c. sunflower seeds
2 T. wheat germ
2 c. nuts (I use almonds and pecans)
4 T. flaxseed
1 c. coconut
1 c. raisins
1 c. dried cranberries
2 tsp. cinnamon
1/8 tsp. salt
2/3 c. oil
½ c. water
½ c. honey (warmed)
1 can sweetened condensed milk

Mix cereal oatmeal, and coconut together in a large bowl and spread on a baking sheet. Brown in a 350-degree oven for 15-20 min, stirring occasionally. Remove from oven and pour mixture back in the bowl. Add rest of the ingredients and mix well. Line a jelly roll pan with aluminum foil and grease well. Put mixture in pan and pat down firmly with hands dipped in cold water. Bake at 350 degrees for 18-30 min or until golden brown. Cool slightly and cut into bars. Put the bars in the greased foil about an inch apart and put them back in the oven for 15-20 min. Now let the bars cool down completely. Don’t put the bars in a tightly cover container because they will get soft and fall apart.


Recipe: Mashed Potato Casserole
From: Anna Smith

10 Medium potatoes
1 pint of Sour Cream (can use less)
1 8oz cream cheese
½ stick of butter
½ cup chopped chives
Salt and pepper

Cook potatoes as for mashing. Mix ingredients in a large bowl, using electric beater. Bake in greased casserole at 350 for 30 min or until lightly browned on top. Garnish with paprika and parsley
